In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and molasses. Combine the flour, baking soda, cinnamon, ginger, salt and cloves; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in chopped walnuts. Drop by tablespoonfuls 2 in. apart onto greased baking sheets.

For the gingerbread peanut butter: Add the roasted peanuts to a food processor and process for 1-2 minutes until flour-like consistency. Add the coconut oil and continue processing until smooth, scraping down sides as needed. This process will vary depending on your food processor but usually 5-10 minutes is standard.

Instructions. Preheat oven to 350°. Mix together spices. Boil water in a medium sauce pan. Lower walnuts into boiling water with a metal strainer or basket for 2 minutes. Remove from the water. Put walnuts in a resealable bag. Add spices and shake. Transfer the nuts to a baking sheet and bake for 8-10 minutes.

The gingerbread pairs well with roasted nuts or walnuts although you may prefer to put those on top of the gingerbread rather than as a side. Coffee, tea, hot chocolate, or my pumpkin spice latte all make for a delightful gingerbread companion. If you are feeling fancy, gingerbread also pairs well with a glass of red wine or port.
