I'm trying out Randy Mosher's chocolate peppermint stout, out of his Radical Brewing book. He doesn't add any chocolate, trusting his malts, but I've got 4oz cacao nibs soaking in vodka right now to go in post boil. He also suggests a few oz of fresh mint at post boil, along with a single Lifesaver candy.

The peppermint is much stronger in the beginning and fades quicker with time. I would estimate about 3-4 weeks before the mint favor is faint. The typical stout flavors, over time, come to overpower it. So if you wait long enough, it'll be a typical coffee/chocolate flavor stout. Still enjoyable but less peppermint.
